Healthy Tailgating Recipe: Southwestern Quesadillas

• 10-inch flour tortillas
• Shredded jack and cheddar cheese
• Goat cheese
• ¼ or ½ stick of melted butter
• 1 red bell pepper
• 1 green bell pepper
• 1 red onion
• 1 medium yellow onion
• Bunch of fresh cilantro
Put goat cheese in the freezer for 10 to 15 minutes and let it get very hard. While it’s chilling, finely dice all ingredients for flag garnish and mix together.
Pull out the goat cheese and break it up into little bits, then mix well with jack and cheddar cheese.
Lay a tortilla flat and put plenty of cheese mix on half, then add the flag mix, fold the tortilla over and gently place on grill. Brush the top of the tortilla with melted butter. When the bottom is crispy brown, flip it over on the grill and brush that side with melted butter.
Repeat this with as many quesadillas as needed. Cut quesadillas into fourths, then arrange on a tray with guacamole or salsa in the middle. Enjoy!
