A Recipe from Govinda’s Kitchen

Vegan Cauliflower Alfredo
Yields 4-6 servings
This comfort food is also comfy without the dairy or high calories. It is a quick ‘n easy dish to enhance any summer meal. Cauliflower is rich in fiber, a blood purifier, an antioxidant and also promotes healthy cell growth.
12 oz pasta of choice
2 tsp olive oil
1 bell pepper, diced (red, orange or yellow)
½ tsp hing (Indian spice used in place of garlic)
½ tsp black pepper
¼ tsp paprika
8 oz cauliflower (medium-sized head), chopped
½ cup water
2 Tbsp nutritional yeast
½ tsp sea salt
Cook pasta to al dente and set aside.
In a small pot, heat olive oil over medium heat, then add bell pepper, cooking for a few minutes. Add hing, black pepper and paprika, then the chopped cauliflower and ½ cup of water. Let
steam until tender.
Once cauliflower is tender, pour the whole mixture into a blender. Add nutritional yeast and sea salt and puree, adding more liquid to reach the desired consistency.
Toss sauce with pasta and add a sprinkle of paprika and chopped parsley.
